Greek Hay has been used by humans as a spice and medicinal plant since ancient times. It is also known in Portuguese by the Arabic name of Alforva and is one of the constituents of Indian curry.
Indians often use the fresh leaves (methi) as a vegetable, cooked with potatoes, spinach or rice. The leaves are also chopped and added to dough for naans and chapattis. The dried leaves are used to season sauces and gravies.
Greek Hay often adds bitterness to Bengali vegetable stews called shuktas. The fresh or dried leaves are essential to the classic Iranian herb and lamb stew, ghormeh sabzi, and are often used to season herb omelettes.
