Assa fétida is a hard, viscous resin obtained mainly from the Ferula assa fétida plant. Native to Central Asia, from Persia (Iran) to Afghanistan, this herbaceous plant is a member of the Umbelliferae family. It is a perennial plant familiar from fennel that is grayish white when fresh, but darkens with age to yellow, red and eventually brown.

The viscous resin comes from the dried sap extracted from the living stem and roots and is macerated in alcohol. Perennial plants need to be at least four years old before they are ready to produce the resin, which is difficult to grate and is traditionally crushed between stones or with a hammer. Today, the most commonly available form is combined assa fétida, a fine powder containing 30% assa fétida resin, along with rice flour and gum arabic.

Raw assa fétida has a strong, unpleasant odor and is bitter in taste. However, when used as a seasoning it adds a mild taste to cooked food, evoking a flavor similar to that of onions or leeks. It is a crucial ingredient in Indian vegetarian cuisine, typically combined with pulses such as lentils, and vegetable dishes such as cauliflower, and is also used in preserves.
