The taste of the leaf of the aromatic herb Tarragon is sweet and at the same time slightly spicy, with a flavor similar to aniseed.

The aromatic tarragon plant adds great flavor to green salads, fish or shellfish dishes, gazpachos and other cold soups and in making sauces and marinades for meat or game dishes.
It goes well with tomatoes and is excellent as a vinegar flavoring. It gives béarnaise sauce its distinctive flavor. It is often used in the preparation of pickles and vinegar-based preserves.
