Oolong tea lies between green tea and black tea in terms of oxidation. In Chinese culture, semi-oxidized oolong teas are known as bluish green tea. Several of its sub-varieties, including those produced in the Wuyi Mountains in the northern part of Fujian Province and in the central mountains of Taiwan, are among the most famous Chinese teas. It tastes more like green tea than black tea because it doesn't have the sweet, rosy aroma characteristic of black tea. On the other hand, this tea also lacks the strong vegetal notes that are typical of green tea. As for its preparation, Oolong needs to be brewed strong. It is from the bitterness that a sweet aftertaste will emerge.
Before the leaves are rolled, they undergo an osmosis process lasting two days to release enzymes (the action required for the next stage). The leaves then oxidize for a short period of time, less than the time dedicated to black tea, before actually reaching full oxidation. To prevent the level of oxidation from increasing, the Oolong tea is heated and finally dried.
Se Chung Natural Oolong Tea, also known as Wu-Long or Black Dragon, is a superior quality semi-fermented tea. The term "Se Chung" means colorful variety, referring to the style of tea made in Anxi County, Fujian Province, China.
Method of preparation:
*Recommended water temperature: 80º to 90º
*Infusion time: 3 - 5 minutes.
*Recommended quantity: 1 teaspoon per person. Approx. 2grs / cup.
*Indicative values which may vary according to personal taste.
