Unlike most teas, Pu Erh red tea is traditionally compacted and aged for at least a few years before being consumed, undergoing a post-fermentation process that gives it a characteristic mineral flavor. For this reason, it is also classified, as with wines, by its year of production, with the oldest Pu-erh costing real fortunes.
It should be noted that Pu-erh is the name given to tea from Pu'er County. What is special about this county's tea production is the habit of pressing and aging the tea in a controlled manner in order to generate post-fermentation. This tea can also be consumed before it is aged, like green tea, but the most prized Pu-erh is aged.

Method of preparation:
*Advised water temperature: 90º to 100º
*Infusion time: 2 - 4 minutes.
