    Ras el Hanout is an almost mystical blend of spices from the Middle East and North Africa.

     

    Originating in the Meghribi villages of North Africa, this famous spice that has taken the world by storm can contain more than 30 ingredients.

     

    In Arabic, "Ras el Hanout" means "the top of the store", i.e. the best the merchant has to offer.

     

    For the souks, the spice merchants, it is a point of honor to have the most famous and sought-after version of this mixture. Its recipes are closely guarded secrets in the spice stores and its formulation is considered an art.

     

    Although it is a traditional mixture in Arab cuisine, it is common in Muslim and Sephardic cuisine, where it is made with the combination of spices that each culture prefers. An icon of Moroccan cuisine, this attractive combination of spices is attributed with aphrodisiac powers.

     

    Ras el Hanout is spicy, with subtle nuances of a floral fragrance within a robust yet sweet flavor. In addition to the traditional ingredients, it can contain exotic ingredients such as rose petals, Spanish saffron, cubeb pepper, lavender and many others.

     

    Extremely versatile, it adds a golden color and an aromatic and attractive flavor to tagines, rice, couscous, poultry, meat and vegetables. Especially in roasted vegetables such as potatoes, zucchini and eggplant. It is also used as a rub on lamb chops before they are grilled on the barbecue.

     

    A good Ras el Hanout is an example of how a wide variety of spices can be fused together to create a new ingredient that is better and more intense than its individual components.
