Puffed rice is formed by the reaction of starch and moisture when heated inside the husk of the grain. Unlike corn, rice grains are naturally lacking in moisture and must first be steamed. Puffed rice can be created by heating the steam-conditioned grains with oil or in the oven. Rice puffed in this way is crunchy and known as "crispy rice". Oven-crisped rice is used to produce the rice flakes of breakfast cereals, as well as the crispy rice used in lion bars, crunch, Krackel, chocolate bars and the like. Although it's not such a dramatic change when compared to popcorn, the process and end result are the same.
