Soy sauce( shoyu in Japanese, jiàngyóu in Chinese) is a sauce made from a mixture of soybeans, roasted cereal, water and sea salt, fermented with the microorganisms Aspergillus oryzae and/or Aspergillussojae.
This sauce is used to replace salt, add aroma and enhance the color of food, and is a traditional condiment in Asian countries such as Japan, China, Korea, Thailand, Indonesia, Malaysia, the Philippines and Singapore.
It is believed that this condiment has one of its roots in jiàng, a kind of salty canned food from China. Canned rice, wheat and soybeans gave rise to Soy Sauce. There are records dating back to the 3rd century BC, in which jiàng was used at banquets.
Since ancient times before Christ, the Japanese have made and consumed salty preserves of food, both animal and vegetable, called hishio. Later, with the influence of Buddhism, introduced to Japan in the 6th century, the consumption of red meat became taboo, and with the introduction of cereal jiàng from China in the Nara Period, the development of canned cereals was encouraged. And gradually, canned soybeans dominated the Japanese palate.
It is not known for sure how or when this sauce was invented. One of the oldest records in which this condiment is mentioned is the Nippo Jisho, a dictionary published by Portuguese Jesuit missionaries in 1603. In this dictionary, the tamari variety shoyu is presented as a delicious liquid, extracted from miso and used to season food.
