    Laurel is a very common spice in Portuguese cuisine, but this little leaf is much more beneficial to health than most people realize. In this tip we're going to talk about all the benefits of laurel.

     

    The bay leaf has been used in cooking for centuries and is much more powerful than you might think. Hailing from the Mediterranean, it thrives particularly well in warm climates, which means that all of its volatile, flavorful oils are preserved when dried - ready to be released when the leaves are crushed or soaked. Bay leaves don't just bring dishes to life, they also play the perfect supporting role, bringing out the flavor of other herbs and spices, as well as meat and poultry.

     

    Dried bay leaves have a delicate, warm aroma that is much less bitter than when they are fresh. Their aroma is often compared to oregano and thyme, and their aromatic and slightly medicinal taste goes particularly well with hot spices such as nutmeg and chilli flakes. Bay leaves are used in the same way as cinnamon sticks, in that they are intended to add another depth of flavor, but should not be eaten. Most of the slightly sweet, refreshing aroma lies in the intense oils absorbed from within, so crushing or shredding a bay leaf will release a tasty impact - just make sure you remove them before serving. By gently drying the bay leaves and foil-sealed packages by hand, we preserve as much of their original flavor, color and subtle aroma as possible.

     

    The strength and flavor of bay leaves increase with cooking time, so they combine best when used in slow-cooked, low heat dishes such as stews and sauces. To add a subtle touch to classic meat sauce, try adding a few whole leaves to the stock while you bring it to the boil. Place crushed leaves in marinades for grilled or roasted meat and poultry, or add to bolognese sauce during cooking. For those with a sweet tooth, add a bay leaf to rice pudding for a deeper flavor.

     

    Bay leaf can also be used as an expectorant for colds and flu.
