The Jalapeno Chili Pepper is a Mexican pepper, grown mainly in the Yucatan peninsula, and is highly prized for its flavor.

The Jalapeno chili pepper, or simply jalapeno, is a very spicy pepper from a medium-large variety of Capsicum annuum originating in Mexico, prized for its burning heat when tasted. When ripe, the pepper is between 5 and 9 cm long and is usually sold when still green.

The name comes from the city of Xalapa, Mexico, where it was produced. Jalapeno chili peppers are known by different names throughout Mexico, such as Sunday pepper, huachinango, and fat pepper. They grow in thick pods over a period of 80 days. The plant grows up to 3 meters high. A single plant can have 35 pods.

Over time, growth comes to an end and the peppers turn red. The current market sells them when they are still green; the red ones sell very little.

They are widely used in various recipes: stuffed peppers, sandwiches, sauces, sweets, eggs, salads and vinaigrettes. When smoked, they acquire an accentuated aroma and flavor and are known as chipotle peppers.

It adds a special touch to all kinds of dishes.
