Trigonella foenum-graecum is an aromatic plant native to Asia and Southern Europe, whose seeds, with a pleasant, slightly sweet and bitter taste, are used as a spice, in curry or other spice mixtures or in teas. Fenugreek seeds have a high percentage of organic phosphates, lecithin, albumins and vitamins A, B1, B2 and C and phytosterols. This plant has tonic, astringent, expectorant and hepato-protective properties. It has a hypoglycemic action, which is beneficial, together with other plants, in the case of diabetes. As a replenishing agent, it is useful in cases of asthenia and anorexia, low weight, children with developmental difficulties and convalescence.
Fenugreek has been used by humans as a spice and medicinal plant since ancient times. It is also known in Portuguese by the Arabic name of Alforva and is one of the constituents of Indian curry.
Indians often use the fresh leaves (methi) as a vegetable, cooked with potatoes, spinach or rice. The leaves are also chopped and added to dough for naans and chapattis. The dried leaves are used to season sauces and gravies.
Fenugreek often adds bitterness to Bengali vegetable stews called shuktas. The fresh or dried leaves are essential to the classic Iranian herb and lamb stew, ghormeh sabzi, and are often used to season herb omelettes.
