Tonka Beans - Cumaru Berry

Known as Cumaru in Brazil where it originated, it is the seed of a tree from the legume family typical of the Amazon region. This little-known spice has gained fame among chefs for being very aromatic.


Fava Tonka-Cumaru are elongated seeds of a size usually no more than two centimeters, covered in a rough black coating, the berry of a large, leafy and elegant South American tree called Cumarú, which has a straight trunk up to 32 meters high and 60 centimeters in diameter, sometimes reaching up to 1 meter and is found in the Amazon.


The Tonka bean has gained notoriety among chefs for having a similar use to vanilla. It is particularly suitable in desserts, especially those made with milk, and also goes well with other spices in savory dishes. A single bean can flavor around 2 liters of milk or cream in the production of desserts: its flavoring power corresponds to that of two vanilla pods.


It can be used in creams, ice creams, rice puddings, cakes, muffins, and even to perfume tomato sauce or baked goods. It can be used to flavor tea, coffee, chocolate or caramel. You can make flavored sugar (like vanilla sugar) by putting one or two seeds in a jar with sugar, or aromatic essence by adding a portion of vodka with one or two seeds and letting it macerate for a while.
