Cinnamomum cassia is a spice obtained from the inner bark of various species of trees of the genus Cinnamomum, used in both sweet and savory foods. The term "cinnamon" also refers to the brownish color of the spice after grinding. It tastes similar to Ceylon cinnamon, but has inferior properties. As it is more abundant, it is cheaper and is the most widely sold.

Cassia cinnamon is the spice obtained from the inner part of the bark of the trunk. It is widely used in cooking as a condiment and flavoring and in the preparation of certain types of chocolate and liqueurs.

In medicine, used in the form of distilled oils, it is known for 'curing' colds and flu.

Especially used at Christmas in traditional sweets. Ideal for cake dough, custard tarts and rice pudding. The perfect combination with a pastel de nata.

May contain traces of other nuts and soy.
