Its Latin name is cynara scolymus, but there are several other species of artichoke, not all of which are edible, so the Wild Artichoke should be avoided.


The Artichoke is a perennial thistle native to southern Europe, northern Africa, and the Canary Islands. In history you will find that it was used by the ancient Egyptians, Greeks and Romans, especially as a digestive aid and for protection of the liver.


The thistle, like the artichoke, is a flowering plant with leaves that have sharp spines on their margins. The plant can reach a height of 1.5 m to 2 m, with an edible shoot 8 cm to 15 cm in diameter with triangular scales.
